Here’s to refreshing summer cocktails that feature cucumbers
Cocktail recipes are always a popular item here and every time we find new ones, we like to share. These cucumber- inspired beverages come courtesy of D’Amico & Partners’ two local restaurants, Café Lurcat and Masa, both of which have catering options. CUCUMBER MINT MARTINI
2 diced coins of sliced, peeled cucumber
4-6 mint leaves
1 oz. fresh lime juice
1 oz. simple syrup
1¾ oz. premium vodka
¼ oz. Cointreau or triple sec
Muddle cucumber, mint leaves, lime juice and simple syrup in a shaker. Add ice and liquor. Shake, then strain into glass and garnish with an unpeeled cucumber slice.
CUCUMBER LIME MOJITO
3 diced coins of peeled, sliced English cucumber
5-6 mint leaves
1 oz. fresh lime juice
1½ oz. rum
In a shaker, combine and muddle the cucumber slices, mint leaves, simple syrup and lime juice. Add rum and ice. Strain into an iced collins glass. Top with club soda and garnish with an unpeeled cucumber wheel and mint sprig.
1½ oz. cucumber-mint infused tequila (recipe follows)
½ oz. Cointreau or triple sec
2½ oz. margarita mix (store bought fine, but recipe follows)
Combine all ingredients into a shaker with ice and mix well. Strain into a cocktail glass with fresh ice and garnish with a thin slice of cucumber.
Cucumber-mint infused tequila
1 liter blanco tequila
2 English cucumbers, peeled to give a striped appearance
2 oz. fresh mint leaves without stalks
Combine all ingredients in a container with a tight lid and steep for at least 35 hours. Strain and pour back into tequila bottle.
4 cups filtered water
2 cups fresh squeezed lime juice
1¾ cups simple syrup
Combine all ingredients and mix well.
